Best Ever Gluten Free Vegan Waffle
These vegan gluten free waffles even better than regular waffles, but are made with no gluten, eggs, or dairy. They have a slight crisp on the outside and soft on the inside. They are so easy to make, all you need is a blender and a waffle machine.
- These gluten free vegan waffle have perfectly crispy edges with a warm and soft texture when you bite into it.

- Ingredients
- 2 cups gluten free oat flour** (or buckwheat flour)
- 2 cups almond flour
- 4 tbsp tapioca starch (or arrowroot)
- 2 tsp baking flour
- 1 tsp pink salt
- 2 tbsp ground flax or chia seeds
- 1 tbsp vanilla extract
- 2 tbsp lemon juice
- 2 & 1/2 cups plant milk
- 2 tbsp olive oil (or avocado, coconut oil)
- 1/2 cup unsweetened applesauce ***
- (optional toppings: berries, maple syrup, vegan butter, almond butter, vegan yogurt)

Method
- 1. Preheat waffle maker.

2. In a high speed blender, combine milk, vanilla, lemon juice, unsweetened apple sauce, olive oil and let them sit for 5 minutes. The lemon will curdle with the milk, making a type of vegan buttermilk.
- 3. In the blender, add the rest of the dry ingredients with the wet mixture. Blend on high speed.
- 4. The batter should be thick. If its too liquidy, add a little oat flour. If its too thick, add a little more plant milk.
- 5. Poor around 1/4 cup of mixture to the waffle griddle, spread batter and let it cook for around 3 minutes or until golden.
- 6. Serve with fruits and maple syrup, yogurt. I like to eat waffles with organic butter, eggs and maple syrup and a few steamed greens! It sounds odd but the salty and savory combo is delicious!
- ***Oat flour: To make gluten free oat flour, simply blend gluten free rolled oats in a high speed blender or coffee grinder. Oat flour can easily be replaced with buckwheat flour in this recipe.
- ***Applesauce: Most grocery stores sell organic unsweetened applesauce (see kids snack or cans). Its also super easy to make at home. Just chop a couple apples with enough water to cover, then simmer on low heat for 15 minutes, with a cinnamon stick or powdered cinnamon. Let it cool and blend in a high speed blender or food processor.
